The building , which can be upped now (as you training your horse) are the Riding Circle, Riding Area & Jumping - Im planning to race my horse as soon as he finishes his current training, hoping I will get some horseshoes so, while the horse is in training again - another building can be upgrading (and so on)

and I did - here you go guys !! You can challenge each player George, Lester and Tessa more than one time...till you loose (their level goes up with every challenge, so in the end in order to compete with them again, you need to wait the cool down period 3hrs for each, if you raced each, as I did )
Sorry didn't take the screenshots from races - they display after each one, with % for both horses competing and also for Winning - with number of Horseshoes you got rewarded !!!
Now - my little horsie "Havarti" (yes, he is one cheesy stallion) won about 18 times and gathered 109 competition horseshoes !! woohoo !!
I will be doing upgrades to the buildings now - and the horse is continuing with his Strength training
As farmerJohn said - it is best to train them at max horseshoe value - you can win more races
The ratio I gave is based on reports from other players. I remember one of them was upset that his 1 million island dollars was converted to only 100,000 shells.
I was upset to farmerjohn!! I pumped a bunch of money in hoping to get lots of shells. I didn't see a breakdown, so I guess there really is no way to tell. I just got a pop up saying "here are your 850,000 shells". Live and learn I guess.

Indeed I did only two upgrades one was for Endurance - the first one (and that was the cheap 20 horseshoes one) and Agility, which is on higher level due to max horseshoe price (4,000 horseshoes max amount) - that upgraded my horse to lvl5 in one 4hrs period (I say good deal, and will be doing that from now on).
Since each training upgrade takes 4hrs, and race cooling period is 3hrs , you got nothing to loose & try to race your horse, see what happens & how many hooves you get.
This way when your horse is training - you can be also upgrading his other training grounds

The suggestion for a strategy of just pumping cash into the bank to get shells was not mine, but was suggested by Goodfella in the form of a question to Latten.
I could be sitting doing nothing, on the island with maybe one house, one orchard & two fields, but in meantime, I could pump-up a lot of cash transfers, right?
So the payout for doing nothing - can NOT be equal or better, than the payout you get from the actual produce you have to spend time & island money on
We also found , that the ratio was less than 1: 10 for exchange of Island dollars to shells , it almost seemed like the more Island dollars you had in bank, the smaller the ratio was becoming.
So yes - Im likewise now, sending money to Island just enough to sustain the production on structures - I will be making drinks in bar till, last hour I figured it will pay more, than doing demo
