I think it's your job to manage how much orchards you have depending on the amount of dung you produce. If you placed 5 orchards on your gourmet farm without placing enough dung producing building to support them, I think you need to re-think your farm.
Also don't forget that the new almond orchard runs for 4h our instead of 12h for the old one. So it effectively consumes 3 times more fertilizer than before... They however allow you to produce more almonds and are more than 3 times more profitable than the old ones... I'm happy with that tradeoff... you get more for your fertilizer.
You've added more Orchards but it sounds like need to add more ducks, donkeys and goats to balance them out. I'm finding it easier to have enough fertiliser than before

i rather hate that they make such small amounts of produce, i could keep making only goat feed for a week and never fill my barn they way it stands right now...it's pretty tough to keep up wt the donkeys and goats...i can get way ahead wt the ducks tho
i think once i can get an architect....... and get those fields and stables up to par then it will all work just fine
i like to keep my apple trees all running because right now they make me most of my money but things seem to be working out ok
