Why is it taking 14+ hrs to upgrade an orchard ( apple) from lvl 2 to lvl 3?
Why is it now costing gold instead of dollars?
Seems like a lot of upgrades are costing gold now..why?

Standard apple orchards do not cost gold to upgrade

Did you have enough farm dollars for the upgrade?

Yes, I had the dollars to purchase the upgrade...dollars was not an option. I have no idea how to provide a screen shot.

Please check what type of Orchard it is too
At the minute we cannot think of a gold only Orchard although someone has wondered if there is a Spring Orchard
Perhaps another farmer can remember

Oh. and with regard the upgrade time the higher level your Farmhouse the shorter the upgrade time

As you progress be prepared for longer upgrade times. My last one was over 6 days!

@RosyStarling I was able to go to this player's farm to look at the orchard, it is a regular old fashioned apple orchard, 7x7 area .... not a specialty building.  
When I pull the INFO circle up for this orchard up from the build menu, it shows upgrade time from level 2 to 3 to be 4h45m. I can understand my build time is less because my main farmhouse is upgraded more, but I don't recall that upgrading taking days, and should not have needed gold.
@Romans828 (US1), when your upgrade is complete, will you let us know what your next upgrade requires (to get the apple to level 4)?

NVM - I think I might have solved it

This player's farm is currently only level 21

The regular apple orchard upgrade to level 3 is available starting at level 30  (per the info area accessed via the build screen).  Since it was upgraded before it was "available", is probably why it cost gold & took longer.

I do recall that land plots were available to purchase for higher prices or gold first, then price reduced once reached the "available' level for it. I did not remember this happening for buildings/stables/orchards too. @RosyStarling - Is this a newer change?

I will double check but I think that it has always been that  something is available for gold before it is available for Farm Dollars

Upgrades are available with gold before they are available with Farm Dollars
