I need some advice on getting ALL members to help in the coop village and not just reap the benefits od being in a coop???

There are no benefits to the coop village.  Even the boat gifts cost way more to repair Yarnical than he ever gives back.  I stopped playing it long ago.  My coop doesn't bother.  Two other coops I'm in keep upgrading everything but the leaders know I'm not taking part.  Unless something is short I might help out but honestly, the whole thing is a huge fail.   Just cost… upgrade, so you can make more to upgrade… 
for what?   Where is the profit in the end?    

"Getting ALL members to help" means GG first has to make it worth anyones time.   They would help if they all got something back in return.   

Sorry, probably not what you wanted to hear.  But it's true.  Your not going to "GET" anyone to help once they figure out it's just not worth it.

So agree on most upgrades -- the bank, though, is a good one if anyone uses the Village at all. Artmaker is is right, though, most of it's just upgrading for the sake of upgrading. However, I do dearly love the Adventurer's Boat. We keep it at the very basic level -- haven't had to do a temp farm in years, and get lots of worthwhile goodies.

Keep the boat at level 1 , I suggest, it will provide enough greenhouse seeds to let you skip most temp farms, which saves a lot of dollars. Or you can do the temp farms just for seaweed products .
The horse meadow does give a meaningful boost to your horses, although it takes a while to show .
Village pond boosts your VH pts , useful if you have a pesky coop below yours that keeps challenging non-stop,(loving the medals, getting lots of seaweed stuff :-)  )
Sooner or later GGS will get to work on Village , we are gradually improving ours, no rush but will help eventually.

Are the village boat donations of food individual or are they for the whole of the coop?

Individual. Whatever you donate goes to your friendship level with the captain. Get the level all the way to the top and you will receive 9 boxes of goodies on the return trip.  (Providing the cabin is fully repaired)That is the personal supply box. The shared supply box is available to everyone, even if they did not help to repair the boat.

Just fill enough to get ur meter there . I provided 900 oak and it came there and then u can provide bakery items to get 9 rewards which may contain 3 or 4 tokens, sw products too .
I find it highly rewarding for doing nothing actually lol .

Its done , getting back 3 or 4 tokens , 1 to 5 seaweed humus and some more crap is very good for giving away 100 around apple turnovers and few oak .

Ours is level 1 jetty between , if your level is higher u need to donate more but u get higher and better rewards in supply box alone . I dont recommend upgrading jetty beyond level 1 until u know u can donate whatever is needed

I feel Jetty is a super easy way to get some cool rewards along the way .
