Weighted competition values can be calculated as follows (these formula’s represent the question marks on horses of the competition and are values you need to specialize on a certain discipline. Having an all-round horse is best though):
Racing = base level (increased by training to earn XP in the Riding Arena) + (Endurance x 3) + (Strength x 2) + (Agility x 1) + (Speed x 1)
Show Jumping = base level (increased by training to earn XP in the Show Jumping Course) + (Strength x 3) + (Agility x 2) + (Endurance x 1) + (Jump power x 1)
Dressage = base level (increased by training to earn XP in the Riding Circle) + (Agility x 3) + (Endurance x 2) + (Strength x 1) + (Elegance x 1)
So black, dark green, light green, numbers correspond to x3, x2 and x1 respectively.
Not sure which % you're looking at.
However the rest of your answer is still confusing just as it was when I read it in Larino's posts. I feel terribly dense because just not getting what suppose to do actually to increase value of horse...of course, will continue to train; and hope for the best ...maybe even the lights will come on and the "aha" moment will arrive sooner than later. But since I rely on Barnacle for training horseshoes, that moment will arrive much later than I would like...will just have to save up more $s to upgrade lab...sigh...loathe to spend real $s for virtual gold...
First decide what you will specialize in - Jumping, Racing or Dressage - This will direct your choice of effects
(also run each horse through the Village Horse Meadow once aiming to get suitable effects)
Buy 2 Goldies, train each to 14 in all 3 attributes and then breed them
Repeat and then train the two 14s to 27 or 28 and then breed them (choosing any suitable effects for preference)
Repeat these 2 steps and breed the two 28s and train the foal to 41 or 42
Repeat from the top etc etc etc
Try to keep all 3 Training grounds in use constantly. Set the number of shoes for each session so that the total number of shoes you use in a day = total number of shoes you earn from Barnacle in a day.
When competing choose the lowest level competitor you can but priority is to make sure you use all the fuel you are given. (Losing doesn't cost you anything so compete as much as possible

The zebras can be found on a newspaper, as @Artmaker (GB1) mentioned, but are there just for decoration.
The newspaper is refering that the runing horse season is Africa themed (and zebras are found in Africa). Nevertheless, horses did not turn into zebras at the begining of the season. So the only real zebra I can find (except for the ones in the newspaper) is on one of the avatars you can win.
